Growing up in the historic village of Bushmills, Nicola of Blackrock House B&B a 5 Star Luxury Bed and Breakfast in Portrush, always loved baking and with the scents of Old Bushmills Distillery all around, it was only a matter of time before the two would lead to an award-winning cake!

‘I created this classic Irish whiskey fruit cake for guests at Blackrock House, my luxury Bed & Breakfast in Portrush for a real taste of the Causeway Coast! It’s delicious on its own, buttered for afternoon tea or with a chunk of cheese on the fairway!
